Come and spend the day with Carmela and she will share with you her passion for cooking simple, inexpensive, seasonal, flavoursome dishes using good quality seasonal ingredients.
During the day, and starting with the basics, Carmela will guide you into becoming a competent pasta maker. Starting with a semola dough you will master hand rolled cavatelli and gnoccheti sardi and you will then move on to an egg enriched dough, making filled tortellini, ravioli and finishing with a large single fresh egg raviolo. The sauces will include a traditional browned butter and sage, seasonal pesto and a classic tomato sugo. Carmela will also make her classic spinach dough, teaching you how to stripe and laminate your pasta.
