Get hands-on learning how to clean and gut squid and stuff them and slow cook them in a tomato-based sauce. Discover how to prepare the fish of the day with fennel and vine tomatoes en carta (in parchment), bake and serve with mixed seasonal leaves, and find out how to make a delicious and vibrant roasted pepper pesto and layer it generously over cod loin, wrapped in Parma ham and roasted.
When all the cooking is complete, you will be able to sample the results….washed down with a glass of Italian wine.
