Blackberry and Elderberry Jam

Ingredients

  • Equal Quantities of Blackberries and Elderberries
  • 3/4lb of sugar per 1lb of berries

Method

  1. Place the berries in a large jam pan and bring slowly to the boil.  Simmer for 20 minutes.
  2. On a low heat add the sugar and constantly stir  whilst increasing the heat until the sugar has dissolved.  
  3. Bring to the boil until the setting point is reached (which will take about 20 minutes).      Leave for 5 minutes.
  4. Put in warmed jars and store ready for use.
