Coffee and Walnut Cake


  • 4 large free-range eggs, at room temperature
  • 8oz self raising flour
  • 8oz margarine
  • 8oz granulated sugar
  • 1 tsp baking powder
  • 1 tbsp strong black coffee
  • 4oz walnuts chopped
For the filling
  • 3oz margarine or butter
  • 8oz icing sugar
  • 1 tbsp strong black coffee
  • Walnuts to decorate


  1. Preheat the oven to 180°C/fan160°C/gas 4. Greece and line two 8” sandwich tins.
  2. Put all the cake ingredients into a mixer and mix until well combined.
  3. Divide between the two cake tins and bake in the oven for 30mins, until firm to the touch.
  4. Leave to cool in the tins for 10 mins and then turn out onto a wire rack and leave to cool completely.
  5. For the filling, combine all the ingredients in a large bowl and beat until light and fluffy. Add more icing sugar to achieve desired consistency. Spread half over each cake and sandwich together, and decorate the top with walnuts.
