Courgette, Date and Walnut Cake

Ingredients

  • 250g plain flour
  • 2 teaspoons bicarbonate of soda
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 3 eggs
  • 250ml vegetable oil
  • 300g caster sugar
  • 225g grated courgette
  • 2 teaspoons vanilla extract
  • 15og chopped walnuts
  • 150 g chopped dates
  • Zest of 2 oranges

Method

  1. Preheat oven to 180 C / Gas 4. Lightly grease one 20x30cm baking tin.
  2. Combine eggs, oil, sugar, courgette and vanilla. Beat until well mixed.
  3. Stir in the flour, bicarbonate of soda, salt, baking powder, cinnamon and orange zest; mix until just combined.
  4. Stir in the chopped walnuts & dates. Pour batter into prepared tin.
  5. Bake in preheated oven for 45 minutes.
