Gluten and Dairy Free Almond and Plum Cake


• 6 eggs, separated  • 250g ground almonds  • 250g caster sugar  • Plums & demerara sugar


  1. reheat oven to 180 C / Gas 4. Grease a 23cm round cake tin and line with baking parchment.
  2. In a medium bowl, beat egg whites until stiff peaks form. In another bowl beat egg yolks with sugar, then fold in whipped egg whites and ground almonds.Put cake mixture into tin.
  3. Cut plums in half and place on top of the cake mixture, skin side up. Sprinkle with demerara sugar.
  4. Bake in preheated oven for 30 minutes. Serve warm or cold.
