• 6 eggs, separated
• 250g ground almonds
• 250g caster sugar
• Plums & demerara sugar
- reheat oven to 180 C / Gas 4. Grease a 23cm round cake tin and line with baking parchment.
- In a medium bowl, beat egg whites until stiff peaks form. In another bowl beat egg yolks with sugar, then fold in whipped egg whites and ground almonds.Put cake mixture into tin.
- Cut plums in half and place on top of the cake mixture, skin side up. Sprinkle with demerara sugar.
- Bake in preheated oven for 30 minutes. Serve warm or cold.
